AYAMASE SAUCE

How spicy do you like your ayamase sauce? We say add some Onga Curry powder and discover a total upgrade to your Ofada!

INGREDIENTS

  • Green Pepper (Rodo Scotch Bonnet)
  • 3 Bulbs Onions
  • Tripe (Assorted Meat)
  • Ofada Rice
  • Salt
  • Onga Curry Powder
  • Kpomo
  • Locust Beans (Iru)
  • Boiled Eggs
  • Palm Oil
  • METHOD

    1. In a pot add cleaned assorted meat, sliced onions, salt, seasoning and onga curry powder. Stir to coat then cover to cook using it’s on liquid.
    2. As soon as it starts boiling, then add some water then cook till it is soft.
    3. In a food processor, process the green pepper and onions roughly
    4. Add bleached palm oil to a pot, add the assorted meat and cook slightly before adding locust beans and the processed pepper and onions.
    5. Fry in the oil for about 5 minutes or until it is slightly caramelized
    6. Add meat stock or water, add the onga curry powder and adjust taste
    7. Add the boiled eggs. Cover and allow to cook for about 3 to 5 minutes then serve with boiled ofada rice
