ESA SOUP aka BENISEED SOUP

Eka Soup (Beni seed soup) is a popular delicacy in Benue State, Nigeria. It is made from sesame seeds, roasted groundnut and palm kernel puree. If you are in search of healthy and delicious soup, eka soup is perfect as the sesame seed is powerful against oxidate stress, it aids digestion and helps lower cholesterol in the body.

INGREDIENTS

  • 1 Cup Beniseed (Sesame seed)
  • 1kg Beef
  • 1/2kg Ponmo
  • 2 Cups Roasted Groundnut
  • 1/2kg Assorted Beef (Tripe)
  • 1 ounce Uziza Leaves
  • 1 ounce Bitter Leaves
  • 1 Onion Bulb
  • 1Tbsp Ground Crayfish
  • 1 Tsp Dry Pepper
  • 6g ONGA Classic Powder
  • Salt To Taste
  • Palm Kernel Puree
  • METHOD

    1. Wash and rinse all your beef properly with salt
    2. Cut your ponmo into tiny pieces and wash properly with salt
    3. Roast your Sesame seed (Beniseed) in minimum heat using a pan till it turns golden brown
    4. Season your beef and ponmo with ONGA classic powder, salt and crayfish. Add little water and start to cook
    5. Slice your onions
    6. Pound the beniseed, onions and roasted groundnut
    7. Wash and add your dry catfish without breaking it into the pot
    8. Add the palm kernel puree into the pot
    9. Add dry pepper into the soup
    10. Roll all that was pounded (sesame seed, onions and roasted groundnut) into small balls, and add into the pot
    11. Add the washed bitterleaf and Uziza leaves into the pot and allow to cook for 2 minutes before turning off the heat.
