FISH STEW AND OKRO SOUP

INGREDIENTS

  • Tomatoes
  • Scotch Bonnet (Ata Rodo)
  • Shombo
  • Onions
  • Titus Fish
  • Onga Classic
  • Okro
  • Iru (Locust Beans)
  • Garri
  • Salt
  • Onga Stew
  • METHOD

    1. Place a pan or pot on medium heat, add vegetable oil and heat for about 3-4 minutes
    2. Add chopped onions and fry for few minutes.
    3. Add blended tomatoes, peppers and onions and cook for 5 minutes
    4. Cut, wash and add your Titus fish to the stew
    5. Season with Onga Stew and add salt to taste
    6. Reduce the heat and allow stew to simmer for about 10 minutes and you are done
    7. Chop or grate okro according to your preferred size
    8. Place a small sauce pan on heat and add water
    9. Once the water comes to boil, add the chopped okro and allow to cook for 5 minutes.
    10. Add iru, onga classic or cube and salt to taste
    11. Cook for another 2 minutes and you are done
    12. Serve the stew and okra soup with eba
