  • 4 Eggs
  • ¼ cup Bell peppers. (Red, Green and Yellow)
  • ¼ cup Tomatoes
  • ¼ cup diced Onions
  • ½ teaspoon Salt
  • Black pepper to season (optional)
  • 1 cube Onga Chicken
  • Yam
  • 4 Cups Water

    1. Peel and cut yams, place in a medium pot with 4 cups of water and cook on medium heat for 10 minutes
    2. Chop all peppers and set aside
    3. Chop tomatoes and set aside
    4. Whisk eggs with salt in a medium bowl and add a cube of Onga Chicken, set aside
    5. Heat a small non-stick frying pan over medium-high and oil the pan using a brush
    6. Add the egg mixture and let it cook for 2 minutes
    7. Add the chopped vegetables, sprinkle some salt and black pepper
    8. You can either cook on a stove on low heat for 5 minutes or place in an oven at 120 degrees for 5 minutes
    9. Carefully slip a spatula under the eggs and flip the omelette. Cook until lightly golden, about 1 min
    10. Serve immediately with boiled yam or bread
