BUKA STYLE TURKEY STEW

Bring the owambe party home this Christmas with our Buka Style Turkey Stew recipe. The whole family is going to ask for more so make a lot​ ​

INGREDIENTS

  • 3 large Bell Peppers
  • 10 large Tomatoes
  • 3 Scotch Bonnet
  • 1 red Onion (sliced & halved)
  • 3 Onga Chicken Cubes
  • 2 tablespoon Curry Powder
  • 2 tablespoon Dried Thyme
  • 1 Cup Vegetable Oil
  • Salt to taste
  • METHOD

    1. Wash turkey parts, place in a pot, add onions, herbs and seasoning (1 tbsp curry, 1 tbsp thyme, onga chicken stock cubes and salt).
    2. Add some water, cover the pot and leave to cook for 15-20 minutes. When cooked, arrange cooked turkey on parchment paper lined tray and grill in the oven or deep fry in vegetable oil.
    3. Blend tomatoes, bell peppers, scotch bonnet and onions. Transfer to a pot and boil to reduce water
    4. In a large pot, add vegetable oil and the remaining sliced onions and fry onions till its translucent. Add pre-cooked pepper, cover and cook for another 5 minutes
    5. Add chicken stock, curry, thyme, Onga chicken cubes, salt and leave to fry for 10 minutes before adding grilled turkey.
    6. Leave the stew to fry for another 5-10 minutes before taking off the heat
