COCONUT JOLLOF RICE

INGREDIENTS
METHOD
- Place a pot on medium heat, pour in the coconut oil
- Add in sliced onions and fry until slightly golden brown
- Add in blended tomato and pepper. Fry for 5 minutes
- Add the bay leaves, garlic powder, thyme and curry, then mix and fry for 60 seconds
- Add the cup of stock, Onga Stew and salt to taste
- Pour the coconut milk and 2 cups of water. Cover the pot and allow to simmer for 10 minutes on medium heat
- Uncover the pot and add the washed rice
- Reduce the heat and cook for 35 minutes
- Serve warm with peppered chicken and plantain
