Learn how to make this special coconut rice recipe. A pleasant twist to the popular jollof rice recipe using coconut milk and onga stew.


  • 2 Cups of Rice
  • 1 Can of Coconut Milk
  • 1 Cup of Blended Tomatoes and Scotch Bonnet
  • Bay Leaves
  • 3 Tablespoons of Tomato Paste
  • 1 Cup of Chicken/Beef Broth
  • 2 Tablespoons of Curry
  • 2 Tablespoons of Thyme
  • Onga Stew
  • Salt
  • Vegetable Oil
  • Water

    1. Place a pot on medium heat, pour in the coconut oil
    2. Add in sliced onions and fry until slightly golden brown
    3. Add in blended tomato and pepper. Fry for 5 minutes
    4. Add the bay leaves, garlic powder, thyme and curry, then mix and fry for 60 seconds
    5. Add the cup of stock, Onga Stew and salt to taste
    6. Pour the coconut milk and 2 cups of water. Cover the pot and allow to simmer for 10 minutes on medium heat
    7. Uncover the pot and add the washed rice
    8. Reduce the heat and cook for 35 minutes
    9. Serve warm with peppered chicken and plantain
