PARTY JOLLOF RICE

INGREDIENTS
METHOD
- Blend tomatoes, red bell peppers, scotch bonnet and onion to a smooth paste. Set aside.
- Add vegetable oil to a medium size pot on medium heat
- Add onions and fry till it’s golden brown
- Add tomato paste, fry for few minutes then add blended pepper mix
- Add bay leaves, curry and thyme
- Season with Onga Stew
- Add chicken or beef broth to taste (optional
- Taste for salt and add accordingly
- Cook for few minutes and add 2 cups of water
- Bring to a boil and pour in washed rice
- Cook for 35-40 minutes on low heat
- Serve with plantain and any protein of your choice
