PARTY JOLLOF RICE

Party jollof is a sure party starter. Learn how to make the original party jollof rice recipe using Onga Stew.

INGREDIENTS

  • 2 Cups of Rice
  • 1 cup of blended tomatoes, red bell peppers, and Scotch bonnet
  • 2 Bay leaves
  • 3 Tablespoons of Tomato Paste
  • 1 Cup of Chicken/beef broth
  • 2 Tablespoons of Thyme
  • 2 Tablespoon of Curry
  • Onga Stew
  • Salt
  • Vegetable Oil
  • Water
  • METHOD

    1. Blend tomatoes, red bell peppers, scotch bonnet and onion to a smooth paste. Set aside.
    2. Add vegetable oil to a medium size pot on medium heat
    3. Add onions and fry till it’s golden brown
    4. Add tomato paste, fry for few minutes then add blended pepper mix
    5. Add bay leaves, curry and thyme
    6. Season with Onga Stew
    7. Add chicken or beef broth to taste (optional
    8. Taste for salt and add accordingly
    9. Cook for few minutes and add 2 cups of water
    10. Bring to a boil and pour in washed rice
    11. Cook for 35-40 minutes on low heat
    12. Serve with plantain and any protein of your choice
