SMOKED PEPPER JOLLOF RICE

What is Christmas without a smoking hot peppered jollof rice and some fried turkey? Our smoked pepper jollof rice recipe is guaranteed to get the party started this holiday, Afterall it's made perfect with Onga chicken

INGREDIENTS

  • 1 cup, Vegetable oil
  • 10 medium sized tomatoes
  • 5 small bell pepper
  • 2 scotch bonnet pepper
  • 4 small onions (for pepper mix)
  • 4 garlic cloves
  • 1 cup, chicken stock
  • 1 tablespoon, thyme
  • ½ tablespoon, curry
  • 1 medium bulb Onion (chopped)
  • 3 Onga Chicken cube
  • 1 teaspoon, salt
  • 2½ cups, water
  • 4 cups, Rice
  • METHOD

    1. Oil the baking tray or dish
    2. Wash the peppers and onions and place in an oven tray/dish (alternatively, grill on charcoal/electric grill).
    3. Bake grill in oven for 40 minutes (pepper should have a bit of char on them) or grill on all sides for 20 – 25 minutes
    4. Turn off heat and leave to cool
    5. Blend pepper till smooth and set aside
    6. Pour oil in a large pot, fry some diced onions till its translucent
    7. Add blended pepper and cook for 7 minutes
    8. Add chicken stock and taste
    9. Season with curry, thyme, salt and Onga cubes
    10. Add water and cook for another 5 minutes on high heat
    11. Turn down the heat once the pepper mix comes to a boil and add washed rice
    12. Cover the pot with airtight lid and cook on low heat for 35-40 minutes
    13. Serve hot with chicken, turkey, beef or any other protein of choice
