UKWA (BREADFRUIT) PORRIDGE
Ukwa is a special delicacy in South East Nigeria. Learn how to make this yummy and nutritious ukwa porridge. Breadfruit contains a good amount of antioxidants and fibre which helps flush out toxins and aids digestion. Breadfruit is also rich in Omega 3 and Omega 6 fatty acids which play important roles in brain function and growth development.

METHOD
- Wash your Ukwa properly to remove all sand/stone content and put the Ukwa on fire and start to cook.
- Add a bit of Akaun (potash)
- Roast the Ehuru (African Nutmeg) for about a minute.
- After this, break the Ehuru and pound smoothly using a mortar
- Pound fresh pepper with the Ehuru (African Nutmeg), it should be a bit rough
- Chop your onions and set aside
- Wash and debone the dry catfish
- Soak the stock fish in a bowl of lukewarm water
- Wash your stock fish and dry catfish. Put the stock fish in a pot and allow to boil for 3 minutes
- Add dry catfish, crayfish, pounded Ehuru and pepper, onions and salt. Stir and leave for another 2 minutes.
- Add palm oil and ONGA Chicken Cube and stir
- Add ground crayfish into the pot, stir and leave to cook for 2 minutes
