UKWA (BREADFRUIT) PORRIDGE

Ukwa is a special delicacy in South East Nigeria. Learn how to make this yummy and nutritious ukwa porridge. Breadfruit contains a good amount of antioxidants and fibre which helps flush out toxins and aids digestion. Breadfruit is also rich in Omega 3 and Omega 6 fatty acids which play important roles in brain function and growth development.

INGREDIENTS

  • 3 Cups Ukwa (breadfruit)
  • 1 wrap Akaun (potash)
  • 1 Piece Dry Fish
  • 1/2 kg Kpomo
  • 6 Nutmeg seeds
  • 4 Scotch Bonnet Peppers
  • 1 Csp Palm Oil
  • 1 Big Piece Stock Fish
  • 2 Tsp Ground Crayfish
  • 1 Bulb Onion
  • Salt to Taste
  • 1 Cube ONGA Chicken
  • METHOD

    1. Wash your Ukwa properly to remove all sand/stone content and put the Ukwa on fire and start to cook.
    2. Add a bit of Akaun (potash)
    3. Roast the Ehuru (African Nutmeg) for about a minute.
    4. After this, break the Ehuru and pound smoothly using a mortar
    5. Pound fresh pepper with the Ehuru (African Nutmeg), it should be a bit rough
    6. Chop your onions and set aside
    7. Wash and debone the dry catfish
    8. Soak the stock fish in a bowl of lukewarm water
    9. Wash your stock fish and dry catfish. Put the stock fish in a pot and allow to boil for 3 minutes
    10. Add dry catfish, crayfish, pounded Ehuru and pepper, onions and salt. Stir and leave for another 2 minutes.
    11. Add palm oil and ONGA Chicken Cube and stir
    12. Add ground crayfish into the pot, stir and leave to cook for 2 minutes
