ABACHA (AFRICAN SALAD)

Learn how to make Abacha! This delicious African salad recipe is a staple meal in south-east Nigeria! The key ingredient in this meal is Abacha shredded cassava! This meal has Garden eggs are filled with antioxidants and has anti-inflammatory properties. Also the presence of Fish which is rich in protein and Omega3 fatty acid, good for the eyes, skin, and immune system

INGREDIENTS

  • 1 kg Fresh Titus Fish
  • 2 Csp Ground Crayfish
  • 3 Pieces Ehuru (African Nutmeg)
  • 28g Utazi leaves
  • 34g Abacha (shredded cassava)
  • 20 Pieces Shrimps
  • 1 wrap Ogiri
  • 2 Csp Palm Oil
  • 2 Tbsp Dry Pepper
  • 2 Cubes Onga Chicken
  • 1 Onion bulb
  • Salt to taste
  • METHOD

    1. Boil water to soften the Abacha
    2. Roast the Ehuru (African Nutmeg) to make it easy to shell
    3. Shell the Ehuru and put it in a mortar, grind
    4. Pour the Abacha into a clean bowl, pour the boiled water into the bowl of Abacha and allow to soak for a minute
    5. Sieve out the water and set the Abacha aside
    6. Remove the head of shrimps and prepare to wash
    7. Wash and spice your fresh titus fish with ONGA chicken Cube, dry pepper and salt. Start to fry
    8. Wash the shrimps
    9. Wash your utazi leaves properly with salt and slice
    10. Wash and slice your garden eggs
    11. Chop your onions
    12. Pour palm oil into a pot using medium heat and allow to fry. Turn off the heat after frying
    13. Add Ogiri (Locust beans), Ground Crayfish and pepper into the pot of oil and stir
    14. Pour the Abacha into the pot, add a cooking spoon of palm oil and stir
    15. Add a cube of ONGA Chicken Cube
    16. Add the Utazi leaves and stir
    17. Add the sliced garden eggs and stir
    18. Pour the sliced onions and stir
