- Soak beans for few hours until soft and easy to peel. Remove the beans coat and soak for another 2 hours
- Place a pot on a cooking hob (cook on high heat), add peeled beans and 3 cups of water to cook until it’s soft and mushy
- Do not add salt
- To save time and energy, once the beans is well cooked, transfer to a food processor or blender. (Do not transfer into a blender when the beans is still hot)
- Blend until you have a smooth paste. Add Iru (Locust beans) into the paste and blend some more
- Pour the bean paste through a sieve that has a wire mesh to remove shaft and bits. Set aside
- Place a pot on a cooking hob, add palm oil and cook until it’s sizzling
- Add onions, then grounded pepper. Stir consistently until the onion dissolves
- Pour the bean paste into the pepper mix and stir.
- Add salt and Onga seasoning cube to taste
- Server with Tuwo Shinkafa or Amala.
