LUMPY EGUSI SOUP

Egusi is a popular and favourite soup across Nigeria. There are various methods in preparing egusi soup. This is the lumpy egusi soup recipe, quite popular in South-West Nigeria and very tasty. Read on to learn how to make the perfect lumpy egusi soup.

INGREDIENTS

  • 2 ½ cups grounded egusi
  • 1 ½ cups of blended onions
  • 1 Cup Palm Oil or a little more or less depending on preference
  • 1 tbsp Crayfish
  • 3 tbsp locust beans
  • 2 cups of coarsely blended pepper mix (red bell pepper, scotch bonnet pepper and onions)
  • 2 Onga Classic
  • Salt to taste
  • 1 cup Beef stock
  • Beef, Beef Tripe, Dry Fish, Ponmo )depending on your preference)
  • METHOD

    1. Mix the ground melon (egusi) with 1 cup of blended onions. Set aside.
    2. Heat the palm oil in a pan and allow it to melt over medium heat. Add the remaining half cup of onion and the locust beans. Let it cook for about 2 minutes on medium heat.
    3. Add the blended pepper and cook till the water is reduced. This takes about 5 minutes on medium heat. Stir every 5 minutes to prevent burning.
    4. Gently introduce the blended Egusi in small portions inside the sauce but don't stir it at this point. Just cover it and leave it to cook for about 10 to 15 minutes. Keep an eye on it so it doesn't burn but don’t stir it until the Egusi is cooked. Gently stir together and add more stock or water if necessary.
    5. Season with salt and 2 sachet of Onga Classic
    6. Add the Fish and meat and leave to cook again for another 5 minutes.
    7. Stir in the ugwu leaves and leave to simmer for about 2 minutes.
    8. Serve while still hot with eba, pounded yam or semo
