Ofe Achara is a delicious delicacy from Abia state, Nigeria. Its key ingredient is Achara (lemongrass) and the addition of uziza and ukazi leaves makes ofe achara a special soup.

OFE ACHARA

Ofe Achara is a delicious delicacy from Abia state, Nigeria. Its key ingredient is Achara (lemongrass) and the addition of uziza and ukazi leaves makes ofe achara a special soup.

INGREDIENTS

  • 1 ounce Achara (lemon grass)
  • 2 tbsp Achi
  • 1 kg Beef
  • 5 scotch bonnet pepper
  • 2 tbsp periwinkle
  • 1 ounce ukazi leaves
  • 2 large dry catfish
  • 3 pieces Stock Fish
  • 1 onion
  • 2 tbsp ground crayfish
  • 2 csp palm oil
  • 2 Onga cubes
  • Salt to taste
  • 1 ounce uziza leaves
  • METHOD

    1. • Wash the beef properly with salt. Season with ONGA Cube, salt, pepper (atarodo) and onions.
    2. • Set on fire and allow to cook for 20 minutes
    3. • Strip the achara (elephant grass) and cut into tiny pieces. Wash and set aside
    4. • Wash and debone the dry catfish. Set aside
    5. • Wash the stock fish and set aside
    6. • Add the dry catfish into the pot and allow to cook for 2 minutes
    7. • Pluck the Ukazi and Uziza leaves. Wash, slice and set aside
    8. • Add the Achara and 2 tablespoons of periwinkle into the pot
    9. • Stir properly and allow to simmer for 3 minutes
    10. • Mix the achi and ground crayfish (this is done to avoid lumps) and add into the soup, add ONGA cube and allow to cook for 2 minutes before adding the Uziza (add a bit of Uziza leaves) and Ukazi leaves, allow to simmer for a minute.
    11. • Ofe Achara is served with Pounded Yam
